THE ONLY WAY TO COOK VENISON

 

First make sure your meat is well bled and hung correctly.

 

 

Place your meat in a self baster or wrap in foil after you season well

and add several knobs of butter, cover will three rashers of bacon.

Add 2mm of water to the pan and roast at 180°C,

gas mark 7 for 20 minutes a pound.
